The elder is an ancient hedgerow plant. Steeped in mystery and superstition, a number of powers and properties have been attributed to this plant, with its frothy, saucer-sized mass of white flowers and dark black berries. We love it as a fragrant flowery tea, hot in winter and cold in summer over ice! They make a wonderful syrup for lemonades!

Tea:

Steep in 1 cup boiling water for 10–15 minutes

Drink hot or chill over ice

Syrup Base:

1 cup dried elderflowers

Simmer in 3 cups water for 30 minutes

Strain, then mix with 2 cups honey or sugar

Bottle and refrigerate
