Ingredients:
2 tbsp olive oil
1 small onion, diced
Salt to taste
2–3 cups chicken, fish, or vegetable broth
1 cup Wild Rice Risotto Blend
¼ cup heavy cream
½ cup shredded Parmesan or Pecorino
Instructions:
Heat olive oil in skillet over medium-high
Add onion, sauté until soft
Stir in rice blend and broth
Bring to boil, reduce heat, cover and simmer
Add more broth if needed until rice is tender
Let rest 5 minutes off heat
Stir in cream and cheese
Optional: Add seasonal vegetables like mushrooms, spinach, or tomatoes.
Serve with: Roast meat, grilled fish, or on its own with a glass of wine
